My {new} Favorite Salad

So … I’m one of those people who are content to eat the same thing for breakfast and lunch almost

As of late, this salad has been my go to, it’s so deliciously fresh and easy I thought I would share it. I know many of you {like me} probably don’t take the time you should to actually make yourself a real lunch. It makes such a difference in how I feel {which equates to how I act} the rest of the day.

My version of Kneader’s Large Green Avocado salad
{Serves 1}

Start with a good sized bowl.
{I use a medium sized stainless steel bowl that my husband lovingly refers to as my dog dish. Whatevs. It works and I don’t make a huge mess.}

Make your dressing IN the bowl –
Mix 1T Olive Oil / 1t Lemon Juice / 1/2t Dijon Mustard / Salt & Pepper to taste


  • 3-4C {yes cups} of Baby Greens
  • 1/2-1C Cherry Tomatoes / Halved
  • 1/2 Cucumber Sliced, then Quartered
  • 1/2 Bell Pepper Sliced, then Chopped
  • Handful of Cilantro Leaves {optional}
  • 2oz Fresh or Whole Mozzarella
  • 1/2 – 1 Avocado Sliced, then Chopped

Toss it all in the bowl to coat with dressing.
